Holly Beach, founding owner of the Silly Yak Bakery, has been baking gluten-free breads and treats since June of 2002. "The reason I started baking gluten-free was due in part to stubbornness and in part to a passion for baking breads for EVERYONE to enjoy. When I found out how difficult it was to get gluten-free ingredients in bulk, I thought to myself how hard it must be for a person with celiac disease to deal with obtaining safe and tasty foods on a day-to-day basis. From that point on, I was determined to make it work!"
Initially the Silly Yak Bakery dedicated one day per week to gluten-free baking. As Holly and crew started getting up earlier and earlier to bake, we soon realized that we needed to add a second gluten-free bake day. Thus gluten-free Tuesdays were begun!
In January 2009 Holly welcomed Brian Roberts as her business partner and co-owner of the Silly Yak Bakery. Brian is a native of Madison and brings administrative and marketing expertise to the Silly Yak Bakery.
Together, Holly and Brian have made Holly's dream of a full-time certified gluten-free baking facility a reality. We now bake gluten-free products daily! Stop in for a tour of the new facility. We built it just for you!
